We aren’t just making a liqueur, we are bottling the bright, coastal sunshine of New South Wales. At Port Jackson Distilling Co., our spirits are crafted as a love letter to the sparkling waters and rich history of Sydney Harbour. To capture that essence in our Limoncello, we rely on local provenance, an uncompromising manual process, and a little bit of distilling alchemy.
The magic begins with the harvest. We source spectacular, unwaxed lemons within the Sydney Basin. These aren't your average supermarket lemons—they are grown specifically to maximize their citrus oil yield. When you see them stacked high at the market, radiating yellow, you can already smell the intense aromatics. Press your thumb against the rind, and the essential oils physically spring to the surface.
Our foundation is the same premium spirit that powers our award-winning Double Distilled Vodka. But a spirit is only as good as the hands that craft it. The lemons are peeled entirely by hand by our team at our North Manly distillery. This painstaking process ensures we capture only the vibrant, zesty oils of the skin while leaving the bitter white pith entirely behind. The sheer volume of freshly peeled citrus fills the distillery with an incredible, uplifting aroma.
Those pure, bright peels are plunged into our high-proof spirit to macerate for weeks, slowly coaxing out every drop of natural flavor and color. But the real magic—the true alchemy of Limoncello—happens during dilution.
Unlike mass-produced liqueurs drowning in cloying syrups, we use clean Australian sugar at a very precise ratio enabling the lemon to take centre stage. When we begin to slowly blend this syrup into the high-proof lemon infusion, a beautiful scientific reaction occurs: the louche effect.
Why does limoncello turn cloudy?
Lemon essential oils dissolve perfectly in high-proof alcohol, but they cannot dissolve in water. As the overall alcohol by volume drops past a specific threshold, those heavy, aromatic citrus oils fall out of solution. They form a micro-emulsion, instantly transforming the clear liquid into a mesmerising, cloudy potion that catches and scatters the light. That signature, opaque glow isn't a flaw, it is visual proof of an exceptionally high concentration of pure lemon oil.
Once the alchemy is complete, the final touches are just as personal. Moving along our benches, every bottle is filled, capped, and dressed in our custom heritage labels featuring historical Port Jackson maps to pay homage to our maritime roots.
